Instructions

  1. Preheat oven to 350° F.

  2. In a large bowl, whisk together the condensed milk, eggs, coconut milk, milk, and grated coconut.

Ingredients

  • ½ cup applesauce
  • â…“ cup sugar
  • ¼ cup honey or maple syrup
  • 2 eggs
  • ¾ cup plain yogurt
  • 1 cup all purpose flour or ½ cup whole wheat flour and ½ cup all purpose flour
  • â…“ cup cocoa powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • â…” cup pitted sweet cherries
  • 2 tbsp chocolate chips optional
  • vegetable oil for the pan

Instructions

  1. Preheat the oven to 400 ºF. Grease a muffin pan with olive oil. Don't use muffin pan liners for this recipe, the muffins will get stuck to them.
  2. Cut cherries in quarters.
  3. In a large bowl mix applesauce, sugar, honey, eggs and yogurt.
  4. Sift together flour, cocoa powder, baking powder, and baking soda. Add salt and whisk together. Add wet ingredients to the dry ingredients and stir just until combined. Don't overmix!
  5. Add cherry and stir. The batter will be chunky.
  6. Divide batter evenly between the pans. Sprinkle with chocolate chips.
  7. Bake for 5 minutes, then lower the temperature to 350 ºF and bake for 15 more minutes. Transfer to the cooling rack and let cool for 10 minutes, then take out of the pan.

You can never fail when you blend fresh, ripe strawberries and homemade shortcake. If you’ve never made shortcake before, you might be surprised when you see how easy it is to create this light, buttery cake.

Tips for Making Strawberry Shortcake Cookies

  • Never wash strawberries until you’re ready to use them. If you’re not using them right away, take the time to store them properly. Strawberries are highly perishable, and they’re delicate. Handle them with care to ensure fresh, delicious fruit and wonderful baking.
  • Pearl sugar also goes by the names sanding sugar, nib sugar and hail sugar. It is a Swedish specialty sugar that doesn’t melt when you bake it. You can buy it in any good grocery store. You can also make your own. Be sure to make the Swedish version.

Ingredients

  • 2 cups strawberries hulled and diced
  • 1 tsp lemon juice
  • ½ cup sugar
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 6 tbsp unsalted butter cold and cut into small pieces
  • â…” cup heavy cream
  • pearl or sanding sugar for sprinkling optional

Instructions

  1. Preheat oven to 375°F.

  2. Line two baking sheets with parchment paper.

  3. Combine strawberries, lemon juice and 2 tbsp sugar.

  4. Whisk together flour, baking powder, salt and remaining sugar in a large bowl.

  5. Cut in the butter with a pastry cutter, or rub in with your fingers until mixture resembles coarse crumbs.

  6. Stir in cream until dough just starts to come together, then stir in strawberry mixture. Don't overmix or overwork the dough.

  7. Drop heaping tablespoons of dough onto baking sheets, spacing evenly apart. Sprinkle with pearl or sanding sugar, and bake 20-25 minutes until golden brown.

  8. Transfer to a wire rack and let it cool.

Yield: about 30 cookies.

Ingredients

For the ice cream

  • 6 tbsp cocoa powder
  • ¾ cup milk
  • 2 cups heavy cream
  • 1 14 oz can sweetened condensed milk
  • 1 tsp vanilla extract
  • 1 oz peanuts
  • 1 oz butterscotch chips
  • 2 oz chocolate chips
  • 1 oz mini marshmallows

For the base

  • 3 cups graham cracker crumbs
  • 1 ¼ sticks butter melted

For decoration

  • chocolate syrup
  • 1-2 oz mini marshmallows
  • 1 oz chocolate chips
  • 1 oz butterscotch chips

Instructions

  1. In a medium saucepan mix milk and cocoa and warm up, stirring, until completely incorporated. Add cream, condensed milk and vanilla, mix well. Freeze until it thickens slightly.
  2. Coarsely chop peanuts, mix with chocolate chips, butterscotch chips and marshmallows.
  3. For the base mix graham cracker crumbs and melted butter. Press into a springform pan, creating bottom and sides. Freeze for 20-30 minutes.

  4. When the ice cream is thick enough to support mix-ins so they don't sink to the bottom, stir all the mix-ins and transfer to the crumb base. Cover with a plastic wrap and freeze for 6 hours.

  5. For the decoration add mini marshmallows, chocolate chips and butterscotch chips and drizzle with syrup. Return to the freezer. Take out in 10-15 minutes before serving to make slicing easier.

Active time 30 minutes + time for cooling and freezing.

Yield: 8 inch cake, 8-10 portions.

Ingredients

  • 1 3 oz package grape Jello
  • 1 3 oz package blue raspberry Jello
  • 1 3 oz package lime jello
  • 1 3 oz package watermelon jello
  • 3 cup boiling water divided into 3/4 cup for each Jello
  • 1 cup international delight sweet cream coffee creamer divided into 1/4 cup for each Jello
  • 2 cup fat free vanilla yogurt divided into 1/2 cup for each Jello
  • 3 8 oz dessert glasses
  • 1 can whipped cream
  • 1 cup unicorn sprinkles
  • 1 package blue raspberry unicorn horns

Instructions

  1. Using a medium bowl, pour the grape package of jello and 3/4 cup of boiling water into the bowl. Whisk until all sugar is dissolved.

  2. Place bowl into the fridge for 30 minutes or until cooled to room temperature.

  3. Remove from fridge and whisk in 1/4 cup coffee creamer and 1/2 cup yogurt until smooth.

  4. Spoon jello mixture into each glass about 1/4 full.

  5. Place glass into fridge for 30 minutes or until the jello is firm to touch and no residue is on fingers.

  6. Repeat steps with remaining jello packages starting with the blue raspberry, then the lime and then ending with the watermelon.

  7. Once all jello flavors are in the glasses, place into fridge overnight.

  8. Remove from fridge the next day and top with whipped cream, sprinkles and the lollipop.

  9. Enjoy!

  • 3 eggs beaten
  • 1/3 cup flour

  1. Mix the flour and sugar together.

  2. Add all other ingredients and blend together.

  3. Poke unbaked pie shell with a fork to prevent the crust from rising.

Oreo Crunch Cookies

Prep Time 20 minutes
Cook Time 10 minutes
Total Time 30 minutes

Ingredients

  • 1 box white cake mix
  • 6 tbsp unsalted butter
  • 1 large egg
  • 1/2 tsp peppermint extract
  • 1/2 tsp vanilla
  • 4 oz cream cheese softened
  • 1 cup Oreo cookie chunks
  • 1 cup Andes Peppermint Crunch pieces
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat oven to 350°F.

  2. Prep cookie sheet with parchment paper.

  3. Lay a sheet of parchment paper on the counter.
  4. Add the cake mix, butter, egg, vanilla, peppermint extract, and cream cheese in a mixing bowl.
  5. Using an electric mixer, beat the batter until it turns into a soft dough.

  6. Add the cookie chunks, peppermint crunch pieces, and chocolate chips. Gently stir these ingredients into the cake mixture.
  7. Transfer to the refrigerator and chill the dough for 30-60 minutes.
  8. With the cookie scoop make cookie balls. Roll the dough into round balls. (Will make about 24 balls)
  9. Bake at 350 degrees for 10 minutes. (Do not over bake)

  10. The cookies will look undone and soft.
  11. Allow the cookies to remain on the cookie sheet and cool for 2-3 minutes.
  12. Using a spatula, gently remove the cookies and put them on the parchment paper lined counter.

  13. With the cookies on the parchment paper lined counter, top gently tap the tops of the cookies with the bottom of the flat spatula to flatten out.

  14. Allow the cookies to completely cool.
  15. Serve.
  16. Store the remaining cookies in the lidded container.

Ingredients

  • 1 cup butter melted
  • 1 cup sugar
  • 1 egg
  • 1 cup persimmon pulp
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cloves
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cinnamon
  • 1 cup chopped nuts
  • 1 cup dried cranberries (or raisins)

Instructions

  1. Preheat oven to 375°F.

  2. Cream butter and sugar until well blended.

  3. Beat in the egg and then the persimmon pulp.

  4. In a separate bowl, sift together the flour, baking soda, salt, cloves, nutmeg and cinnamon. Once sifted, blend well into the butter mixture.

  5. Stir in the nuts and dried cranberries (or raisins).

  6. Drop a heaping teaspoon on a greased cookie sheet.

  7. Bake at 375°F for about 15 minutes.

  8. Yields 4 dozen.

White Chocolate Cranberry Cookies

White Chocolate Cranberry Cookies are made velvety smooth by the white chocolate while the tangy flavor of cranberries keeps them from being overly sweet.

Ingredients

  • 1/2 cup butter softened
  • 1 cup granulated sugar
  • 3/4 cup brown sugar packed
  • 1/4 cup milk
  • 2 tbsp orange juice
  • 1 egg
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1 cup white chocolate chunks (or white chocolate chips)
  • 2 1/2 cups frozen cranberries coarsely chopped

Instructions

  1. Preheat oven to 375°F.

  2. Cream the butter, granulated sugar and brown sugar.

  3. Stir in the milk, orange juice and egg.

  4. Mix in the remaining ingredients.

  5. Drop dough by teaspoonfuls about 2 inches apart onto a greased baking sheet.

  6. Bake 10-15 minutes.
