Roasted Acorn Squash Stuffed with Cranberries and Walnuts

You’ll love this Roasted Acorn Squash. The walnuts provide crunch, the cranberries add tang, and everything comes together on a bed of warm, golden squash.

Ingredients

  • 1 acorn squash
  • 1/2 cup fresh cranberries
  • 1/2 cup walnuts roughly chopped
  • 1/2 cup brown sugar
  • 2 tbsp orange juice
  • 1 tbsp honey
  • 2 tbsp butter

Instructions

  1. Preheat oven to 375º F.
  2. Cut the squash in half, then scrape out the seeds.
  3. Add the cranberries, walnuts, and brown sugar, orange juice and honey together in a large bowl, then mix together until evenly coated.
  4. Add the mixture evenly into the hollow centers of each half of the squash.
  5. Top each half with 1 tbsp butter.
  6. Place in a baking dish that is loosely covered with aluminum foil.
  7. Bake until tender enough for fork to pierce easily, approximately 80-90 minutes.
  8. Remove from oven and serve immediately.
  9. Enjoy!

Ingredients

  • 4 slices bacon
  • 4 chicken breasts skinless, boneless
  • ½ tsp salt (or to taste)
  • ½ tsp pepper (or to taste)
  • 3 tbsp Worcestershire sauce
  • 1/2 cup chicken stock
  • 6 tbsp bbq sauce your favorite brand
  • 1 cup shredded Monterey Jack cheese (or cheddar cheese)
  • 2 green onions sliced
  • 1 large roma tomato diced

Instructions

  1. To your skillet, add bacon and fry on medium heat until crispy.
  2. Cool bacon on a plate lined with paper towel, then chop up coarsely.
  3. Season both sides of chicken breasts with salt and pepper to taste.
  4. Cook chicken breasts on medium high heat for 2-3 minutes until browned on each side.
  5. Add Worcestershire sauce to skillet and pour chicken stock over the chicken breasts. Cover skillet and cook 4-6 minutes or until no longer pink inside.
  6. Turn off heat.
  7. Top each chicken breast evenly with bbq sauce, cheese and bacon.
  8. Broil about 1 minute or until the cheese melts.

  9. Top with green onions and tomato.
  10. Enjoy!

If you’re planning a full Octoberfest meal, you’re halfway there. All you need to add is sauerkraut or braised red cabbage and warm pumpernickel rolls.

Ingredients

  • 2 tbsp olive oil divided
  • 6 traditional brats about 1 1/4 pounds
  • 1 red onion sliced
  • 1 tbsp garlic minced
  • 1/2 8 oz package portobello mushrooms quartered
  • 1 green pepper sliced
  • 4 mini red peppers sliced
  • 4 mini orange peppers sliced
  • 2 Gala apples cut into 1/2-inch-thick wedges
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1/4 tsp minced sage
  • 1/2 cup chicken broth

Instructions

  1. Preheat oven to 350 degrees.
  2. Heat the cast iron skillet with 1 tablespoon of olive oil on medium-high.

  3. Add the brats.
  4. Continue to cook the brats for about 6 minutes while occasionally turning them over (or until brown).

  5. When cooked, remove the brats from the skillet.

  6. Set aside.
  7. Add the rest of the olive oil into the cast iron skillet.

  8. Cook the onions for about 1 minute.
  9. Next add the peppers, cooking for about 3 minutes.

  10. Lastly add the mushrooms, cooking for 1 minute.

  11. Continue to stir as each ingredient is added. (They should appear slightly soft.)

  12. Add the sage, salt, and pepper.
  13. Stir well.
  14. In a separate skillet, saute the apples.

  15. When the apples are done, add them to the cast iron skillet.

  16. Add the brats and broth to the cast iron skillet.
  17. Stir to combine.
  18. Transfer the cast iron skillet to the preheated oven set at 350 degrees for about 10 minutes. (Check to make sure that the sausage is completely cooked and the vegetables are tender.)

These Pesto Turkey Sliders let you keep all the fun of a bite-size burger while cutting the fat and adding some sophistication.

Ingredients

  • 2 tbsp pesto plus extra if you want to use it as a topping
  • 1 egg
  • 1/4 cup quick-cooking oatmeal
  • 16 oz ground turkey 93% lean
  • mozzarella cheese slices
  • slider buns

Instructions

  1. Mix first three ingredients in a large bowl.
  2. Add in ground turkey and mix with your hands.
  3. Form slider-sized patties.

  4. Cook on a nonstick griddle or pan for a total of about 14 minutes, turning approximately every 4 minutes.
  5. Add cheese on top and cook for one more minute.

Recipe Notes

Makes 6-8 patties; Serves 4-6 with sides.

I used store-bought refrigerated pesto. I think any kind of traditional pesto would work though. Also, mozzarella cheese was really good, but provolone or swiss would be good alternatives.

I’ve loved cooking with soda ever since a Southern friend told me to “dump a can of root beer” into the ribs I was planning to make. I’ve been sold ever since.

This recipe takes that secret up a notch. The bright sweetness of cherry matches with sharp spices to create a tangy, sweet-and-sour flavor bomb in every bite.

Tips for Making Cherry Cola Chipotle Ribs

Use real soda. You won’t get the same tenderness or flavor with diet soda. The ribs need a combination of sugar and carbonation to get tender.

You can make these in a slow cooker. Put the ribs and the cola in the slow cooker and cook on low for five to six hours. During the last hour, mix the remaining sauce ingredients and pour the mixture over the ribs.

Ingredients

  • 1 can Cherry Coke
  • 1 cup ketchup
  • 1 chipotle peppers in adobo sauce chopped and seeded
  • 2 tsp garlic minced
  • 1/2 cup brown sugar packed
  • 1/4 cup apple cider vinegar
  • 1/2 tsp salt
  • 1/4 cup dried cherries
  • 3 racks babyback ribs
  • chipotle bbq dry rub

Instructions

  1. Tear off a long sheet of foil for each rack of rib.

  2. Sprinkle the dry rub onto the rib and rub until every inch is coated in the rub.

  3. Fold the foil over the rib and let sit for 30 minutes to an hour to absorb the flavor of the rub.

  4. Using a medium pot, add the coke and bring to a boil.

  5. Reduce heat and stir so that it doesn't burn.

  6. Add in the remaining ingredients except the ribs.

  7. Stir and bring to a boil.

  8. Reduce the heat to a simmer and cook for 8 minutes or until thick.

  9. Remove from heat and pour into a blender.

  10. Blend until smooth.

  11. Pour into a mason jar.

  12. Preheat grill.

  13. Once grill is heated, turn to low temp.

  14. Place rack of ribs onto the grill still wrapped in foil.

  15. Let ribs cook for 1 hour.

  16. Peel back the foil and brush on some Cherry Cola BBQ Sauce.

  17. Continue to cook the ribs for another hour before adding more BBQ sauce.

  18. After 2 hours of cooking time, peel the ribs off the foil and place directly onto the racks of the grill.

  19. Coat ribs in more BBQ sauce and let cook for 30-45 minutes.

  20. Once ribs are done, ENJOY!

This dish goes by so many different names. You may know it by Goulash, Johnny Marzetti, Macaroni Red, Goulash, Johnny Marzetti, Macaroni Red, Slumgullion, Chili Mac, Hamburger Casserole Slumgullion, Chili Mac, Hamburger Casserole or Beefaroni. But whatever you call it, you won’t be disappointed by the abundance of flavors in this beloved American meal!

What’s In American Chop Suey?

The core ingredients consist of ground beef, sautéed onions, a hearty tomato sauce and tender elbow macaroni. However, there are many regional variations. In addition to our favorite blend of ingredients, many choose to add green pepper, mushrooms and even cheese. Since it’s a flexible and forgiving recipe, you have the liberty to add your personal favorites to the base ingredients.

Origin Of The Name?

First of all, this dish has nothing to do with Chinese food in any way. In Cantonese, the character for chop suey is tsaâp suì, meaning “mixed bits.” There is a belief that the take-out dish was invented by a Chinese chef in the United States. Because it’s made out of mixed bits, he named it tsaâp suì. The Cantonese pronunciation was later converted to chop suey by Americans. Eventually, the dish evolved into an Italian-American staple. However, there does not seem to be a consensus on the exact origin of the dish or its name.

Ingredients

  • 3 tbsp olive oil
  • 1 large onion diced
  • 3 cloves garlic minced
  • 2 lbs ground beef lean
  • 1 tbsp italian seasoning
  • 2 15 oz cans tomato sauce
  • 1 28 oz can crushed tomatoes including liquid
  • 1 cup water
  • 1 tbsp worcestershire sauce optional
  • salt and pepper to taste (I use about 1 1/2 tsp salt, 1/2 tsp pepper)
  • 3 cups elbow macaroni uncooked

Instructions

  1. According to the directions on the box, cook the elbow macaroni in salted water until al dente. Drain and set aside.

  2. Brown the ground beef and onion on medium-high heat until no pink remains. Drain grease.

  3. Add the garlic and cook over medium heat for about 1 minute.

  4. Stir in the Italian seasoning, tomato sauce, crushed tomatoes, water, Worcestershire sauce, salt and pepper until the mixture begins to boil. Then simmer for approximately 20 minutes.

  5. Stir in the elbow macaroni to the mixture and serve hot.

We prefer to serve with French bread and a side salad.

Zucchini Boats are created by slicing a zucchini in half lengthwise and hollowing it out with a spoon. This essentially creates a “boat” for you to fill up the zucchini with your favorite ingredients.

I have found that zucchini is a perfect vessel for stuffing any kind of cheese, meats, or dips into. I regularly choose it over chips, breads, and crackers because it’s a much healthier alternative.

How do you make Buffalo Chicken Stuffed Zucchini Boats?

Once you’ve made your “boat”, then combine chicken, cream cheese, ranch seasoning, ¼ cup buffalo wing sauce and ¼ cup cheese in a stand mixer.

Next, spoon the mixture into the zucchini boats, pressing down. Pile extra mixture on top until the boats are overflowing slightly. Add the remaining cheese and buffalo sauce over the top.

Now it’s time to bake for 15 to 20 minutes. You will know it is done when the cheese is melted and the zucchini tender.

How do you make the Blue Cheese Sauce?

In a food processor, blend the blue cheese crumbles and the heavy whipping cream until thick. For the next step, slowly add milk until a desired consistency is reached. Now you are ready to serve your Buffalo Chicken Stuffed Zucchini Boats!

Ingredients

  • 3 zucchini
  • 1-2 lbs cooked chicken breast shredded
  • 8 oz package cream cheese softened
  • 2 tbsp ranch seasoning
  • 1/2 cup buffalo wing sauce your favorite
  • 1 cup mozzarella cheese shredded

Blue Cheese Sauce

  • 1/4 cup blue cheese crumbles
  • 1/4 cup heavy whipping cream
  • 1/2 cup milk

Instructions

  1. Preheat oven to 400 degrees.

  2. Slice zucchini in half lengthwise and scoop out the middle of the vegetable with a spoon leaving about 1/2 inch along the outside creating a “boat.” NOTE: If you prefer the zucchini to be soft when serving, bake the zucchini boat for 5 to 10 minutes prior to stuffing.

This healthy White Bean and Farro Salad is packed with flavor and hearty enough for a main course. What makes it special is Farro, my new favorite grain! It’s a delicious and chewy whole grain with a mild nutty flavor. It has more protein and fiber than wheat and is especially rich in magnesium and B vitamins. I love it so much that I have been using it as a replacement over rice and pasta.

White Bean and Farro Salad

This quick and easy salad recipe has only six ingredients. The ease of preparation is sure to make your hectic day a little less stressful.

You will want to follow the instructions that come with the specific Farro you purchase. Most directions will say to add Farro and water in a pot and bring to a boil. Then you will want to reduce the heat to low, cover and simmer anywhere from 25-40 minutes. The Farro should be tender and all of the liquid should be absorbed.

Although it’s not necessary, you can speed up the cooking time of Farro by soaking it beforehand. Simply add enough cold water to submerge the grain completely, put a lid on it, and then refrigerate for 8-24 hours.

Four pantry ingredients is all it takes to make the easiest Red Wine Vinaigrette ever. This classic vinaigrette recipe is super versatile, only takes a few minutes to whisk together, and always tastes delicious! To save time, I prepare it while the Farro is cooking.

Now it’s time to add the Farro, white beans, kale, feta cheese, dried cranberries, and pepitas in a large mixing bowl.

White Bean and Farro Salad with Red Wine Vinaigrette

Salad

  • 1 cup uncooked Farro
  • 1 can white beans drained and rinsed
  • 1 cup kale torn small by hand
  • 1/2 cup dried cranberries
  • 1/2 cup pepitas
  • 4 ounces feta crumbled

Dressing

  • 1/2 cup red wine vinegar
  • 1/2 cup olive oil
  • 1 tsp dried parsley
  • 1/2 tsp salt

Instructions

  1. Prepare 1 cup Farro as directed in the package.

  2. While Farro is cooking, prepare dressing.

  3. Add all dressing ingredients to a small mixing bowl. Whisk until well combined and refrigerate.

  4. When Farro is done, rinse with cold water until cool.

  5. In a large mixing bowl, add Farro, beans, kale, feta*, cranberries, and pepitas.
