You might think that spiced rums, coconut and mint are strictly for summertime drinking, but this special mojito is all dressed up in a winter coat.

This is a drink that looks as gorgeous as it tastes. It comes out pure white, and the pomegranate arils look like holly berries against snow.

Tips for Making a White Christmas Mojito

  • If you’ve never eaten or cooked with pomegranate, don’t be afraid. Pomegranates have thick, tough skins and can be messy. They’re absolutely worth it, however, for their sweet, tangy taste, gorgeous color and incredible health benefits. Get a few tips for seeding and eating them here.
  • Coconut milk is not coconut cream, which is thicker and sweeter. Coconut milk is a popular ingredient in Thai and Latin American cooking. You can usually find it in the international foods section of your grocery store.

White Christmas Mojito

This White Christmas Mojito looks as gorgeous as it tastes. It comes out pure white, and the pomegranate arils look like holly berries against snow.

Ingredients

  • ½ lime
  • 6-8 mint leaves
  • 1 tbsp sugar
  • 1 oz Bacardi Silver Rum
  • ½ oz Malibu Rum
  • ¼ cup coconut milk canned
  • club soda
  • pomegranate arils garnish

Instructions

  1. Cut the ½ lime into 2-3 wedges.
  2. Muddle the lime wedges, mint and sugar in a glass to release the lime juice and mint oils.
  3. Add ice until it fills one to three quarters of the glass (based on your preference).

  4. Pour in the rum and coconut milk. Stir until combined.
  5. Top with club soda.
  6. Garnish with mint and pomegranate arils.

    Festive looking and tasty, this cocktail was a hit at our holiday party! Thank you!

    We substituted a few of the measurements and ingredients:
    Our Measurements:
    *1 oz Rum
    *1 oz Coconut Rum

    Ingredient Changes:
    *.5 oz Cream de Cocoa in place of coconut milk

    Garnish: cranberry in place if pomegranate on SimplyServ’d 3 1/2 inch Party Picks
