Hawaiian Macaroni Salad
This colorful Hawaiian Macaroni Salad goes perfectly with all those burgers, chicken, hot dogs and veggie burgers you're throwing on the hot coals.
- 1 lb elbow macaroni cooked & drained
- 20 oz can pineapple tidbits (reserve 3/4 cup liquid for dressing)
- 8 oz package diced ham
- ⅓ cup apple cider vinegar
- 1 cup shredded carrots
- ½ cup green onions diced
- 1 cup sharp cheddar cheese cubed
- ¾ cup pineapple tidbit juice
- 1 tbsp sugar
- 1 ½ cups mayonnaise
- 6 oz pineapple greek yogurt
- 1 tsp salt (optional)
Stir the macaroni and apple cider vinegar together in a large bowl. Allow to cool.
Add in the remaining salad ingredients.
Whisk together all of the dressing ingredients in a medium bowl.
Pour over pasta, then stir to coat.
Cover and refrigerate for a minimum of 1 hour.
