Tips for Making Apple Cider Shortbread Cookies

  • If you’re unsure about the difference between apple cider and apple juice, you’re not alone. It’s actually difficult to tell them apart. For the best results, select plain cider with no spices or flavors added to it.
  • You’ll need a rolling pin and a cookie cutter to make these. If you don’t have these items on hand, try these emergency substitutes. A wine bottle or drinking glass can sit in for the rolling pin, and a drinking glass can step in for a cookie cutter.
  • Pecan shortbreads are a classic cookie. If you want, you can add ground pecans to these cookies to add crunch and smooth, nutty flavor.

Apple Cider Shortbread Cookies

Ingredients

Cookie Ingredients

  • 2 tbsp apple cider
  • 1 cup powdered sugar
  • 1 cup unsalted butter soft
  • 1 pinch salt
  • 2 1/2 cups all-purpose flour

Glaze Ingredients

  • 1 cup powdered sugar
  • 2 tbsp apple cider

Instructions

  1. Preheat oven to 375 degrees.
  2. Line a cookie sheet with parchment paper
  3. Sift flour. Set aside.
  4. Lightly flour a flat surface. (Cutting board)
  5. Add the butter, powdered sugar, and apple cider in a mixing bowl. Using an electric mixer combine the ingredients.
  6. Continue mixing while adding in the salt.
  7. Slowly add the sifted flour, a cup at a time, continuing to mix for a few minutes. At first the mixture will resemble sand. Continue to mix until it begins to look like dough.
  8. Slightly flour your hands and work with the dough to form a ball. Move the cookie dough onto the floured cutting board.

  9. Reflour your hands and coat the rolling pin with that flour.
  10. Using the flour coated rolling pin, roll the cookie dough out until it is about 3/4 inches thick.

  11. With the round cookie cutter, cut out the dough to form the cookies.
  12. Use a spatula to move the raw cookies to the prepped cookie sheet.
  13. Bake at 375 degrees for 6 minutes.

  14. Remove from the oven and allow to cool on the cookie sheet for 1 minute.
  15. Gently transfer the cookies to a cooling rack.
  16. Whisk the glazing ingredients (apple cider and powdered sugar together).

  17. Spoon the glaze over the cooled cookies allowing the glaze to firm.
  18. Sprinkle with cinnamon.

Ingredients

  • 1 1/2 cups flour
  • 2 tsp pumpkin pie spice
  • 1/4 tsp kosher salt
  • 1/2 tsp baking soda
  • 1 cup sugar
  • 1 cup pure pumpkin puree
  • 3/4 cup canola oil
  • 2 large eggs
  • 1/2 tsp pure vanilla extract
  • 1 1/4 cups mini chocolate chips
  • 1 1/2 cups dried cranberries

Instructions

  1. Preheat oven to 350 degrees. Spray 9-inch loaf pan with Pam baking spray. Set aside.

  2. Using a medium bowl, whisk together the flour, pumpkin pie spice, salt and baking powder until combined.

  3. Whisk in the sugar, pumpkin puree, canola oil, eggs, and vanilla until combined.

  4. Fold in 1 cup of the mini chocolate chips and 1 cup dried cranberries.

  5. Pour batter into the loaf pan.

Ingredients

Crust Ingredients

  • 1/2 cup unsalted butter melted
  • 1/4 cup sugar
  • 1 tsp vanilla
  • 1/4 tsp salt
  • 1 cup flour spoon/ level out

Apple Filling Ingredients

  • 2 large Gala apples peeled and thinly sliced to 1/4 in thick
  • 2 tbsp flour
  • 2 tbsp sugar
  • 2 tsp bourbon
  • 1 tsp ground cinnamon
  • 1/8 tsp ground nutmeg

Streusel Ingredients

  • 1/2 cup old-fashioned oats
  • 1/3 cup brown sugar packed
  • 1/4 tsp ground cinnamon
  • 1/4 cup flour
  • 1/4 cup unsalted butter cold and cubed

Instructions

  1. Preheat oven to 300 degrees.
  2. Line an 8 in square baking dish with parchment paper. Set aside.

Crust Directions

  1. In a medium bowl stir the melted butter, sugar, vanilla, and salt together.
  2. Slowly add the flour to the mixture stirring to blend all the ingredients together.
  3. Using your hands, press the mixture into the baking pan.
  4. Bake at 300 degrees for 15 minutes.

Apple Filling Directions

  1. In a large bowl add the sliced apples, flour, sugar, bourbon, cinnamon and nutmeg.

  2. Continue working with the apples until they are well coated. Set aside.

Streusel Directions

  1. Begin adding the oats, brown sugar, cinnamon, and flour in a medium bowl.
  2. Whisk all ingredients together until they are mixed well.
  3. Slowly begin to work the butter into the dry ingredients. Using your hands to work with the mixture until it looks like crumbs. Set aside.
  4. Remove the crust from the oven. Set aside.
  5. Increase the temperature of the oven to 350 degrees.
  6. Begin to make a thin layer of apples on the baked crust. Put the apple slices close together pressing them down into the crust.
  7. Sprinkle the streusel on top of the apples.
  8. Return to the oven and bake at 350 degrees for 30-35 minutes. (Streusel should be a golden brown)
  9. Take the baked streusel from the oven. Set it aside to cool for 20 minutes at room temperature.
  10. Transfer to the refrigerator for 2 hours to chill.
  11. Remove the bars from the baking pan and cut into bars.

Bar Ingredients

  • 1/2 cup unsalted butter melted
  • 1/3 cup pumpkin puree
  • 3/4 cup brown sugar packed
  • 1/4 cup sugar
  • 1 large egg yolk room temp
  • 2 tsp vanilla
  • 1/2 tsp salt
  • 1/2 tsp pumpkin pie spice
  • 1 3/4 cup flour

Topping Ingredients

  • 3 tbsp sugar
  • 1/4 tsp ground cinnamon

Instructions

  1. Preheat oven to 350 degrees.
  2. Prep baking pan with baking spray.
  3. Line the baking pan with parchment paper.

  4. Add butter, pumpkin puree, both sugars, egg yolk, and vanilla to a mixing bowl. Begin to blend ingredients with the electric mixer. As needed scrape down the sides of the mixing bowl.
  5. Slowly add the dry ingredients (baking soda, salt, pumpkin pie spice, and flour) to the wet ingredients.

  6. Using the electric mixer on low-speed, continue to mix until all ingredients are combined. (Dough will be sticky)

  7. Begin pouring the dough into the prepared baking pan. Scrape the sides of the bowl with a rubber spatula to get all of the dough out.
  8. Butter your hands, if necessary, to help spread the dough in the baking pan.
  9. Combine the sugar and cinnamon together in a small bowl. Pour the cinnamon sugar evenly on top of the dough.

  10. Bake at 350 degrees for 25 minutes. (If you prefer a chewy gooey bar shorten the baking time)

  11. Remove from the oven when done. Set aside to cool before cutting into bars.

Instructions

  1. Preheat oven to 250 degrees.
  2. Prep cookie sheet by lining it with parchment paper.
  3. Melt the butter. Set aside,
  4. Combine cereal, crackers, and pumpkin seeds in a large bowl,
  5. Add the melted butter to a small bowl.
  6. Add the Worcestershire sauce, garlic powder, 1/4 teaspoon pepper sauce and 1/8 teaspoon pepper sauce.

  7. Stir as you add the ingredients.

Pumpkin Carrot Cake

Nestled under cream cheese frosting, this moist, rich cake keeps everything you love about carrot cake while adding a seasonal touch that makes it perfect for fall.

Ingredients

Cake

  • 2 cups all-purpose flower
  • 3 tsp pumpkin pie spice
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3 large eggs
  • 1 ¼ cups pumpkin puree
  • 1 ½ cups granulated sugar
  • ½ cup brown sugar
  • ½ cup vegetable oil
  • 1 1/2 tsp vanilla extract
  • 1 ½ cups grated carrots 3 med carrots
  • 1 cup chopped pecans or walnuts

Frosting

  • 2 (8oz) packages cream cheese blocks full fat
  • 2 sticks butter softened
  • 1 tbsp vanilla extract
  • 2 cups powdered sugar
  • cinnamon optional

Instructions

Cake

  1. Preheat oven to 350° F.
  2. Grease two 9-inch cake pans or line them with parchment paper.
  3. Whisk together the flour, pumpkin pie spice, baking soda, baking powder, and salt.
  4. In a separate bowl, beat together the eggs, pumpkin puree, granulated sugar, brown sugar, vegetable oil and vanilla extract.
  5. Gradually combine the dry mixture into the wet mixture.
  6. Fold in the carrots and chopped nuts. Pour equal amount into each of the cake pans.
  7. Bake until an inserted toothpick comes out clean, about 50-60 minutes.
  8. Let cool inside the pans for 15-20 minutes, then place on wire racks to cool completely.

Frosting

  1. Beat the cream cheese and butter until light and fluffy, about 4-5 minutes.

  2. Beat in the vanilla extract and whip until smooth.

  3. Gradually add the powdered sugar and continue to whip with a mixer on high for a few minutes.

  4. If the consistency is not to your liking, try adding more powdered sugar.

  5. Sprinkle cinnamon on top (optional).

Ingredients

  • 2 tbsp olive oil divided
  • 6 traditional brats about 1 1/4 pounds
  • 1 red onion sliced
  • 1 tbsp garlic minced
  • 1/2 8 oz package portobello mushrooms quartered
  • 1 green pepper sliced
  • 4 mini red peppers sliced
  • 4 mini orange peppers sliced
  • 2 Gala apples cut into 1/2-inch-thick wedges
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1/4 tsp minced sage
  • 1/2 cup chicken broth

Instructions

  1. Preheat oven to 350 degrees.
  2. Heat the cast iron skillet with 1 tablespoon of olive oil on medium-high.

  3. Add the brats.
  4. Continue to cook the brats for about 6 minutes while occasionally turning them over (or until brown).

  5. When cooked, remove the brats from the skillet.

  6. Set aside.
  7. Add the rest of the olive oil into the cast iron skillet.

  8. Cook the onions for about 1 minute.
  9. Next add the peppers, cooking for about 3 minutes.

  10. Lastly add the mushrooms, cooking for 1 minute.

  11. Continue to stir as each ingredient is added. (They should appear slightly soft.)

  12. Add the sage, salt, and pepper.
  13. Stir well.
  14. In a separate skillet, saute the apples.

  15. When the apples are done, add them to the cast iron skillet.

  16. Add the brats and broth to the cast iron skillet.
  17. Stir to combine.
  18. Transfer the cast iron skillet to the preheated oven set at 350 degrees for about 10 minutes. (Check to make sure that the sausage is completely cooked and the vegetables are tender.)

Ingredients

Cake

  • 3 eggs
  • 1 cup sugar
  • 2/3 cup canned pumpkin
  • 1 tsp lemon juice
  • 3/4 cup flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground ginger
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 cup chopped walnuts

Filling

  • 1 cup powdered sugar
  • 1 6 oz pkg cream cheese softened
  • 4 tbsp butter softened
  • 1/2 tsp vanilla

Instructions

Cake

  1. Beat eggs at high speed for 5 minutes. Gradually add sugar.

  2. Stir in pumpkin and lemon juice. Set aside.

  3. Stir together flour, baking powder, salt, ginger, cinnamon and nutmeg.

  4. Fold into the pumpkin mixture.

  5. Spread into greased and floured pan (10x15x1).

  6. Top with chopped walnuts.

  7. Bake at 375° for 15 minutes.

  8. Turn onto towel dusted with powdered sugar.

  9. Starting at the narrow end, roll towel and cake together.

  10. When cool, unroll and fill with filling.

  11. Roll up again and refrigerate.

Filling

  1. Beat until smooth.
