Ingredients

Cake

  • 2 cups all-purpose flower
  • 3 tsp pumpkin pie spice
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3 large eggs
  • 1 ¼ cups pumpkin puree
  • 1 ½ cups granulated sugar
  • ½ cup brown sugar
  • ½ cup vegetable oil
  • 1 1/2 tsp vanilla extract
  • 1 ½ cups grated carrots 3 med carrots
  • 1 cup chopped pecans or walnuts

Frosting

  • 2 (8oz) packages cream cheese blocks full fat
  • 2 sticks butter softened
  • 1 tbsp vanilla extract
  • 2 cups powdered sugar
  • cinnamon optional

Instructions

Cake

  1. Preheat oven to 350° F.
  2. Grease two 9-inch cake pans or line them with parchment paper.
  3. Whisk together the flour, pumpkin pie spice, baking soda, baking powder, and salt.
  4. In a separate bowl, beat together the eggs, pumpkin puree, granulated sugar, brown sugar, vegetable oil and vanilla extract.
  5. Gradually combine the dry mixture into the wet mixture.
  6. Fold in the carrots and chopped nuts. Pour equal amount into each of the cake pans.
  7. Bake until an inserted toothpick comes out clean, about 50-60 minutes.
  8. Let cool inside the pans for 15-20 minutes, then place on wire racks to cool completely.

Frosting

  1. Beat the cream cheese and butter until light and fluffy, about 4-5 minutes.

  2. Beat in the vanilla extract and whip until smooth.

  3. Gradually add the powdered sugar and continue to whip with a mixer on high for a few minutes.

  4. If the consistency is not to your liking, try adding more powdered sugar.

  5. Sprinkle cinnamon on top (optional).

  • 2 scoops lime sherbet
  • 1 tablespoon vanilla simple syrup optional
  • 2 cups 7UP if you don't want soda use sparkling water
  • 3 to 4 gummy worms

Instructions

  1. Place lime sherbet into the glass.

  2. Add in vanilla syrup.

  3. Top with 7UP, but be careful not to over fill the glass. It will foam.

  4. Top off with gummy worms and serve.
  5. This can also be done with more to make a punch bowl. Just add the entire container of sherbert and the full 2 liters of 7UP. Toss in the gummy worms and serve!

Ingredients

Cake

  • 3 eggs
  • 1 cup sugar
  • 2/3 cup canned pumpkin
  • 1 tsp lemon juice
  • 3/4 cup flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground ginger
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 cup chopped walnuts

Filling

  • 1 cup powdered sugar
  • 1 6 oz pkg cream cheese softened
  • 4 tbsp butter softened
  • 1/2 tsp vanilla

Instructions

Cake

  1. Beat eggs at high speed for 5 minutes. Gradually add sugar.

  2. Stir in pumpkin and lemon juice. Set aside.

  3. Stir together flour, baking powder, salt, ginger, cinnamon and nutmeg.

  4. Fold into the pumpkin mixture.

  5. Spread into greased and floured pan (10x15x1).

  6. Top with chopped walnuts.

  7. Bake at 375° for 15 minutes.

  8. Turn onto towel dusted with powdered sugar.

  9. Starting at the narrow end, roll towel and cake together.

  10. When cool, unroll and fill with filling.

  11. Roll up again and refrigerate.

  1. Beat until smooth.

Ingredients

  • 3/4 cup unsalted butter softened
  • 3/4 cup brown sugar packed
  • 1/4 cup sugar
  • 1 3.4 oz box instant pumpkin spice pudding mix dry
  • 1/2 cup pumpkin puree canned
  • 1 tsp vanilla
  • 2 1/4 cups flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp pumpkin pie spice
  • 1 1/2- 2 cups white chocolate chips

Instructions

  1. Preheat oven to 350° degrees.

  2. Line cookie sheets with parchment paper.

  3. Whisk together the dry ingredients.
  4. Add the butter, both sugars, pudding mix into the mixing bowl. With the electric mixer cream the above ingredients. Add the pumpkin and vanilla to the mixture while continuing to use the electric mixer.
  5. Add the blended dry ingredients to the creamed mixture. Stir well to combine. Stir in the white chocolate chip into the batter.
  6. With the measuring spoon drop the cookie dough onto the prepped cookie sheets.
  7. Bake at 350° for 8-10 minutes.
  8. When done remove from the oven and set aside to allow to cool slightly. Transfer to a cooling rack to cool completely.

Recipe Notes

If you do not have instant pumpkin spice pudding mix, you can substitute using vanilla pudding mix + 1/2 tsp pumpkin pie spice.

Pumpkin Oatmeal Chocolate Chip Cookies

These pumpkin oatmeal chocolate chip cookies are quick and easy to make using ingredients you probably have on hand. The creamy warmth of pumpkin sparked with traditional spices is the perfect counterpoint to the rich indulgence of chocolate.

Ingredients

  • 3/4 cup unsalted butter softened
  • 1 cup light brown sugar lightly packed
  • 1/2 cup sugar
  • 1/2 cup + 2 tbsp canned pumpkin
  • 1 large egg yolk
  • 1 tsp vanilla
  • 1 1/2 cup flour
  • 1 1/2 cup quick oats
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup + 2 tbsp mini semi-sweet chocolate chips
  • 1/2 cup milk chocolate chips

Instructions

  1. Using a hand mixer, beat together the softened butter and both sugars in a large bowl.

  2. Add the pumpkin, egg yolk, and vanilla beating to combine with the butter mixture.

  3. Whisk together the flour, quick oats, cinnamon, pumpkin pie spice, baking soda, baking powder, and salt. (Carefully measure your flour, spoon it in the measuring cup not packed in the cup.)

  4. Add the dry ingredients to the wet ingredients. Stir well to combine. (Don't over stir.)

  5. Add the chocolate chips to the batter. Stir well.

  6. Cover the batter with plastic wrap and put in the refrigerator for 1 hour.

  7. Preheat oven to 350 degrees.

  8. Line a cookie sheet with parchment paper. Use a small ice cream scoop to measure out the cookie size. Use a spatula to flatten the cookies.

  9. Return the cookie sheet to the refrigerator for an additional 10-15 minutes. 

  10. Remove from the refrigerator and put directly into the oven to bake.

  11. Bake at 350 degrees for 12-14 minutes. (They will be slightly under baked.)

  12. Cool the cookies on the cookie sheet for 1-2 minutes allowing them to continue to bake.

  13. Remove from the cookie sheets to a wire rack for complete cooling.

  14. Store in an airtight container.
