Ingredients

  • 1 1/2 lbs yukon gold potatoes diced
  • 1 tsp kosher salt
  • 1 lime cut into 6 wedges
  • 1/4 cup olive oil
  • 1 red onion thinly sliced
  • 4 tbsp garlic diced
  • 3 scallions sliced
  • 1 tbsp red pepper flakes
  • 1/2 cup cilantro chopped

Instructions

  1. Allow BBQ Grill to heat up for 10 minutes.

  2. Using a cookie sheet, cover the bottom with foil.

  3. Place all ingredients into the center of the foil, except the cilantro.

  4. Cover ingredients with the foil into a tight package.

  5. Cover the ingredients with another layer of foil.

  6. Place the potatoes over the hottest part of the grill.

  7. Rotate the potatoes every 10 minutes for about 50-60 minutes.

  8. Remove from grill, unwrap, top with cilantro and enjoy!
