Using a brownie mix makes this recipe fast and easy to prepare. You can literally mix all the ingredients together in one large bowl. We used the 15.5 oz Pillsbury Gluten Free Brownie mix in our recipe.

Ingredients
- 1 box gluten free brownie mix 15.5 oz
- 1/4 cup melted butter
- 2 eggs
- 2 tbsp coffee
- 1/2 cup chocolate chips
- 1/2 cup toffee bits
Instructions

Preheat oven to 325 degrees.

Mix the brownie mix, melted butter, eggs, coffee, chocolate chips, and toffee bits together in a large bowl.

Scoop a tablespoon of batter onto a parchment paper-lined baking sheet. Spread cookies at least two inches apart on the baking sheet.

Bake for 12 to 14 minutes. Cookies should be firm on the edges and soft in the center.

Allow to cool on the baking sheet for at least five minutes before moving them to a wire cooling rack to cool completely.
