- 1 1/2 lbs yukon gold potatoes diced
- 1 tsp kosher salt
- 1 lime cut into 6 wedges
- 1/4 cup olive oil
- 1 red onion thinly sliced
- 4 tbsp garlic diced
- 3 scallions sliced
- 1 tbsp red pepper flakes
- 1/2 cup cilantro chopped
